Lebkuchen
Info

- 2 ¼ cups Honey
- 1 cup Water
- 1 cup Sugar
- ¼ lb. Butter (2 cubes)
- ¼ lb. chopped Almonds
- ¼ lb. chopped Walnuts
- 2 Tbsp. finely chopped Citron (use flour to prevent stickiness)

- grated rind of two Lemons
- 1 tsp. Nutmeg
- ¼ tsp. Cloves
- ¼ tsp. Cinnamon
- 1 Tbsp. Baking Soda, dissolved in a little water
- ¼ tsp. Oil of Anise
- 12 cups Flour

Boil the first four ingredients together, and let cool. Mix everything together and roll it out about ⅜" thick on cookie sheets. Bake at 350° for about 10-15 minutes. Cut into squares immediately. The dough may set for a day or two before baking if using white flour. Grandma Mabel Hagemeister (Gretchen's Mother's Mother) made this several weeks ahead to allow the flavors to age, but it tastes great fresh.
